- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 1/2 cup graham cracker crumbs
- 2 tbsp butter, melted
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese until smooth.
- Add the sugar and vanilla extract, and mix until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and flour until smooth.
- In another bowl, combine graham cracker crumbs and melted butter.
- Press the crumb mixture into the bottom of mini cheesecake cups.
- Pour the cheesecake batter over the crusts.
- Bake for 20-25 minutes or until set.
- Let cool and refrigerate for at least 2 hours before serving.
Notes
- Top with fresh fruit or chocolate sauce for added flavor.
- Can be made ahead of time and stored in the refrigerator.
- Use a water bath for a creamier texture.
