Description

Mini cheesecakes are delightful bite-sized desserts that are creamy, rich, and perfect for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 2 tbsp butter, melted

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, beat the cream cheese until smooth.
  3. Add the sugar and vanilla extract, and mix until well combined.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream and flour until smooth.
  6. In another bowl, combine graham cracker crumbs and melted butter.
  7. Press the crumb mixture into the bottom of mini cheesecake cups.
  8. Pour the cheesecake batter over the crusts.
  9. Bake for 20-25 minutes or until set.
  10. Let cool and refrigerate for at least 2 hours before serving.

Notes

  • Top with fresh fruit or chocolate sauce for added flavor.
  • Can be made ahead of time and stored in the refrigerator.
  • Use a water bath for a creamier texture.
