- 8 cups whole grain or brioche bread, cut into 1-inch cubes (day-old preferred)
- 6 large eggs
- 2 cups skim milk or unsweetened almond milk
- 1/2 cup natural creamy peanut butter
- 1/4 cup unsweetened cocoa powder
- 1/3 cup light brown sugar or coconut sugar
- 1/2 cup plain Greek yogurt (2% or higher)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/3 cup dark chocolate chips
- 2 tablespoons chopped roasted peanuts
- Maple syrup or honey for serving
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
- Spread the bread cubes evenly in the prepared dish.
- In a large bowl, whisk together eggs, milk, peanut butter, cocoa powder, brown sugar, Greek yogurt, vanilla extract, and salt until smooth.
- Pour the custard mixture evenly over the bread cubes and gently press down to coat.
- Let it sit for 10 minutes to absorb the custard.
- Sprinkle chocolate chips and chopped peanuts over the top.
- Bake uncovered for 30 to 35 minutes until set and lightly puffed.
- Let cool for 5 minutes before slicing and serve warm with maple syrup or honey.
