Description

Ingredients

  • 8 cups whole grain or brioche bread, cut into 1-inch cubes (day-old preferred)
  • 6 large eggs
  • 2 cups skim milk or unsweetened almond milk
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup light brown sugar or coconut sugar
  • 1/2 cup plain Greek yogurt (2% or higher)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 2 tablespoons chopped roasted peanuts
  • Maple syrup or honey for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish.
  3. Spread the bread cubes evenly in the prepared dish.
  4. In a large bowl, whisk together eggs, milk, peanut butter, cocoa powder, brown sugar, Greek yogurt, vanilla extract, and salt until smooth.
  5. Pour the custard mixture evenly over the bread cubes and gently press down to coat.
  6. Let it sit for 10 minutes to absorb the custard.
  7. Sprinkle chocolate chips and chopped peanuts over the top.
  8. Bake uncovered for 30 to 35 minutes until set and lightly puffed.
  9. Let cool for 5 minutes before slicing and serve warm with maple syrup or honey.

Use day-old bread for the best results, let the custard soak into the bread thoroughly, and customize toppings to your liking.
