Description

Roasted vegetables like asparagus and carrots that create a sweet and savory side dish, enhanced with garlic, thyme, and optional Parmesan.


Ingredients

  • 1 bunch of asparagus, trimmed
  • 4 large carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. Place the trimmed asparagus and carrot sticks on the prepared baking sheet.
  4. Drizzle the olive oil over the vegetables.
  5. Sprinkle with minced garlic, dried thyme, salt, and pepper.
  6. Toss everything gently until evenly coated.
  7. Spread the vegetables out in a single layer.
  8. Roast in the preheated oven for 20-25 minutes, tossing halfway through.
  9. Transfer the roasted vegetables to a serving platter.
  10. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

For a quicker option, use an air fryer. You can also prepare the veggies ahead of time and store them in the fridge before roasting.
