Description

A heartwarming rosemary garlic pull-apart bread that offers a delightful balance of savory and aromatic notes.


Ingredients

  • 2 teaspoons Platinum Yeast from Red Star
  • 1 Tablespoon granulated sugar
  • ¾ cup (180ml) whole milk, warmed to 110°F (43°C)
  • 3 Tablespoons (43g) unsalted butter, softened
  • 1 large egg
  • 2 and 1/3 cups (291g) all-purpose flour, plus more as needed
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 Tablespoon fresh rosemary, finely chopped (or 2 teaspoons dried)
  • 5 Tablespoons (71g) unsalted butter, extra soft
  • 1 Tablespoon fresh parsley, finely chopped (or 2 teaspoons dried)
  • 2 garlic cloves, minced (or ½ teaspoon garlic powder)
  • ¼ teaspoon salt
  • ¾ cup (95g) shredded parmesan, mozzarella, or cheddar cheese
  • 1 Tablespoon (14g) unsalted butter, melted
  • Coarse or flaky sea salt for sprinkling

Instructions

  1. In a mixing bowl, combine the warm milk, sugar, and platinum yeast. Let it sit for about 5 minutes until frothy.
  2. Incorporate the softened butter and egg, mixing until well-combined.
  3. Gradually add the flour, salt, garlic powder, and rosemary. Work the dough until smooth and elastic.
  4. Knead on a floured surface for 5-7 minutes, adding flour as needed.
  5. In a separate bowl, mix the 5 tablespoons of softened butter, chopped rosemary, parsley, garlic, and salt for the filling.
  6. Roll the dough into a rectangle about ¼ inch thick. Spread the filling over the dough, leaving a small border.
  7. Cut the dough into strips, stack them, and cut into squares.
  8. Layer the squares upright in a baking dish.
  9. Cover with a kitchen towel and let rise for 30 minutes in a warm location.
  10. Preheat your oven to 375°F (190°C). Brush the top with melted butter and sprinkle with coarse salt.
  11. Bake for 25-30 minutes until golden brown and aromatic.

Notes

You can prepare the dough a day in advance. If short on time, cook in an air fryer at 350°F for 15-20 minutes.
