Description

Delicious bite-sized savory sausage hashbrown treats, perfect for breakfast or as a snack.


Ingredients

  • 2 cups hashbrowns (frozen or fresh grated)
  • 1 cup cooked and crumbled sausage (pork, turkey, or plant-based)
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 large eggs
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine hashbrowns, crumbled sausage, cheese, eggs, green onions, salt, and pepper. Stir to mix thoroughly.
  3. Grease a muffin tin with cooking spray or oil.
  4. Scoop the mixture into each muffin cup, filling them about 3/4 full.
  5. Bake for 18-20 minutes, until golden brown and set in the center.
  6. Let cool slightly before removing from the tin.
  7. Serve warm and enjoy!
