- 2 cups hashbrowns (frozen or fresh grated)
- 1 cup cooked and crumbled sausage (pork, turkey, or plant-based)
- 1 cup shredded cheddar or mozzarella cheese
- 2 large eggs
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine hashbrowns, crumbled sausage, cheese, eggs, green onions, salt, and pepper. Stir to mix thoroughly.
- Grease a muffin tin with cooking spray or oil.
- Scoop the mixture into each muffin cup, filling them about 3/4 full.
- Bake for 18-20 minutes, until golden brown and set in the center.
- Let cool slightly before removing from the tin.
- Serve warm and enjoy!
