Description

A delightful dish harmonizing spicy Buffalo chicken and sweet roasted potatoes, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 medium sweet potatoes, diced
  • 1/2 cup Buffalo sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the sweet potatoes by cutting them into uniform cubes and placing them on a sheet pan.
  3. Season the sweet potatoes with olive oil, salt, and pepper, then toss to coat.
  4. Bake the sweet potatoes for 15 minutes.
  5. While the sweet potatoes bake, dice the chicken into bite-sized pieces and toss with Buffalo sauce.
  6. Combine the chicken with the sweet potatoes after 15 minutes and mix well.
  7. Return to the oven and bake for an additional 20 minutes.
  8. Serve hot, garnished with fresh green onions.

Notes

Ensure even cooking by cutting sweet potatoes uniformly. Check chicken’s internal temperature; it should be at least 165°F (74°C) before serving.
