Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the sweet potatoes by cutting them into uniform cubes and placing them on a sheet pan.
- Season the sweet potatoes with olive oil, salt, and pepper, then toss to coat.
- Bake the sweet potatoes for 15 minutes.
- While the sweet potatoes bake, dice the chicken into bite-sized pieces and toss with Buffalo sauce.
- Combine the chicken with the sweet potatoes after 15 minutes and mix well.
- Return to the oven and bake for an additional 20 minutes.
- Serve hot, garnished with fresh green onions.
