- 2 pounds boneless, skinless chicken breasts
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine honey, soy sauce, minced garlic, salt, and pepper. Whisk until well blended.
- Place chicken breasts into the slow cooker and pour the honey garlic mixture evenly over the chicken.
- Layer broccoli florets and sliced carrots on top of the chicken.
- Drizzle olive oil over the vegetables.
- Secure the lid and cook on low for 6 hours or on high for 3 hours, until chicken is cooked through and tender.

Notes
Make the sauce and chop vegetables a day in advance for quicker preparation. If no slow cooker is available, you can cook in an oven-safe pot at 350°F for 30-40 minutes.
