- 1 cup almond flour
- 1 1/2 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 4 oz high-quality chocolate (dark or semi-sweet)
- 1/2 cup heavy cream
- 1/2 cup marshmallow fluff
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 300°F (150°C).
- Mix almond flour and powdered sugar in a bowl; sift together.
- In a separate bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
- Gently fold the dry ingredients into the meringue until a thick batter forms.
- Pipe small circles onto a parchment-lined baking sheet, about one inch in diameter.
- Let them sit for 30 minutes to an hour until a skin forms.
- Bake for 15-20 minutes until the shells are firm and spring back gently.
- Allow to cool completely before filling with ganache.
- For the filling, heat heavy cream until just boiling; pour over chopped chocolate and stir until melted.
- Mix in marshmallow fluff and vanilla extract, stirring until smooth.
- Assemble the macarons by adding the filling between two shells, gently pressing them together.
Notes
Make-ahead tips: Store baked shells in an airtight container for up to a week. The filling can also be made in advance. Consider flavoring the ganache or fluff to elevate the taste.
