Description

Delicate macarons capturing the essence of the beloved campfire treat, S’mores, with crunchy meringue shells and rich chocolate ganache filled with fluffy marshmallow.


Ingredients

  • 1 cup almond flour
  • 1 1/2 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 4 oz high-quality chocolate (dark or semi-sweet)
  • 1/2 cup heavy cream
  • 1/2 cup marshmallow fluff
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Mix almond flour and powdered sugar in a bowl; sift together.
  3. In a separate bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
  4. Gently fold the dry ingredients into the meringue until a thick batter forms.
  5. Pipe small circles onto a parchment-lined baking sheet, about one inch in diameter.
  6. Let them sit for 30 minutes to an hour until a skin forms.
  7. Bake for 15-20 minutes until the shells are firm and spring back gently.
  8. Allow to cool completely before filling with ganache.
  9. For the filling, heat heavy cream until just boiling; pour over chopped chocolate and stir until melted.
  10. Mix in marshmallow fluff and vanilla extract, stirring until smooth.
  11. Assemble the macarons by adding the filling between two shells, gently pressing them together.

Notes

Make-ahead tips: Store baked shells in an airtight container for up to a week. The filling can also be made in advance. Consider flavoring the ganache or fluff to elevate the taste.
