Description

A delightful and nutritious wrap filled with creamy avocado, hearty chickpeas, and vibrant spices, perfect for lunch or dinner.


Ingredients

  • 400g Canned Chickpeas
  • 2 Medium Ripe Avocados
  • ½ Medium Red Onion, diced
  • 1 Medium Bell Pepper, chopped
  • 1 Small Jalapeño, minced
  • 2 tbsp Lime Juice
  • 4 Large Tortillas
  • Chili powder, to taste
  • Cumin, to taste
  • Smoked paprika, to taste
  • Garlic powder, to taste
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, mash the ripe avocados until smooth.
  2. Stir in drained chickpeas, diced red onion, chopped bell pepper, and minced jalapeño. Squeeze in lime juice and add spices. Mix well.
  3. Heat a non-stick skillet over medium heat. Lightly warm tortillas for about 20 seconds on each side.
  4. Lay a warm tortilla on a flat surface and spoon a generous portion of the chickpea and avocado mixture onto the center.
  5. Fold in the sides of the tortilla and roll tightly from the bottom to enclose the filling.
  6. Cut the wrap in half if desired and serve immediately with dipping sauces or salsas.

Notes

Make the filling a day in advance for enhanced flavors. Warm tortillas for best results.
