- 400g Canned Chickpeas
- 2 Medium Ripe Avocados
- ½ Medium Red Onion, diced
- 1 Medium Bell Pepper, chopped
- 1 Small Jalapeño, minced
- 2 tbsp Lime Juice
- 4 Large Tortillas
- Chili powder, to taste
- Cumin, to taste
- Smoked paprika, to taste
- Garlic powder, to taste
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, mash the ripe avocados until smooth.
- Stir in drained chickpeas, diced red onion, chopped bell pepper, and minced jalapeño. Squeeze in lime juice and add spices. Mix well.
- Heat a non-stick skillet over medium heat. Lightly warm tortillas for about 20 seconds on each side.
- Lay a warm tortilla on a flat surface and spoon a generous portion of the chickpea and avocado mixture onto the center.
- Fold in the sides of the tortilla and roll tightly from the bottom to enclose the filling.
- Cut the wrap in half if desired and serve immediately with dipping sauces or salsas.
Notes
Make the filling a day in advance for enhanced flavors. Warm tortillas for best results.
