Description

A refreshing salad featuring vibrant strawberries, crunchy almonds, creamy avocado, and a zesty champagne vinaigrette.


Ingredients

  • ⅔ cup sliced or slivered almonds
  • 3 tablespoons sugar
  • 10 ounces arugula greens
  • 8 ounces strawberries, hulled and quartered
  • 1 avocado, chopped
  • 2 ounces crumbled goat cheese
  • ⅓ cup roasted salted pistachios, chopped
  • 3 tablespoons champagne vinegar
  • ½ lemon, juiced
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, freshly grated
  • Pinch kosher salt and pepper
  • ½ cup olive oil

Instructions

  1. Caramelized Almonds: In a skillet over medium heat, add the sliced almonds and sprinkle with sugar. Stir constantly for about 5 minutes until golden brown. Transfer to a parchment-lined surface to cool.
  2. Champagne Vinaigrette: In a small bowl, mix champagne vinegar, lemon juice, honey, Dijon mustard, grated garlic, and a pinch of salt and pepper. Slowly whisk in olive oil until emulsified.
  3. Assemble Salad: In a large mixing bowl, combine arugula, strawberries, avocado, goat cheese, and pistachios. Drizzle vinaigrette over and gently toss using salad tongs. Sprinkle caramelized almonds on top before serving.

Notes

Make-ahead tips: Prepare the vinaigrette in advance and store in the refrigerator. Avoid freezing the salad as textures will change.
