- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 4 cups fresh strawberries, sliced
- 1/4 cup sugar (for strawberries)
- Whipped cream (for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- Combine flour, baking powder, salt, and sugar in a mixing bowl and whisk until blended.
- Cut the cold, cubed butter into the dry mixture until it resembles coarse crumbs.
- Pour in heavy cream and stir just until combined.
- Turn the dough out onto a floured surface, pat it into a 1-inch thick layer, and cut into rounds.
- Place the biscuits onto a baking sheet and bake for 15-20 minutes until golden brown.
- Mix sliced strawberries with 1/4 cup sugar and let sit for 15 minutes.
- Slice the baked biscuits in half horizontally.
- Layer on macerated strawberries and whipped cream on the bottom biscuit half.
- Cap with the top half of the biscuit, serve immediately.
Notes
For maximum freshness, assemble right before serving. Prepare the biscuits a day in advance and store them in an airtight container.
