Description

Charming sugar cookie cups filled with creamy frosting, perfect for any celebration.


Ingredients

  • 3/4 cup salted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles
  • 2 ounces cream cheese (softened)
  • 3 cups powdered sugar
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Instructions

  1. Preheat the oven to 350°F and grease two regular muffin pans.
  2. Cream the butter and sugar in a large bowl for 3-5 minutes until light and fluffy.
  3. Add the egg, vanilla, and almond extract; beat until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, and baking soda.
  5. Gradually mix in the dry ingredients into the creamed mixture until just combined.
  6. Using a measuring spoon, scoop about 2 tablespoons of dough into each muffin cup and press down firmly.
  7. Bake for 12 minutes until edges are golden.
  8. Let cool for 15 minutes, then press down in the center to form cup shapes.
  9. In a medium bowl, beat cream cheese and butter until smooth, then mix in powdered sugar, vanilla, and milk for frosting.
  10. Decorate cookie cups with frosting and sprinkles.

Notes

These treats can be prepared a day in advance. Make sure to let the frosting come to room temperature before piping.
