Description

A comforting bowl featuring roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and a spicy honey drizzle.


Ingredients

  • 2 medium Sweet Potatoes
  • 1 pound Ground Beef
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 cup Cottage Cheese
  • ¼ cup Hot Honey
  • 1 Avocado, sliced
  • 2 tablespoons Olive Oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Wash, peel, and dice the sweet potatoes into cubes. Drizzle with olive oil, and season with salt and pepper.
  2. Spread the sweet potatoes on a baking sheet and roast for 25 minutes, tossing halfway through.
  3. Heat a large skillet over medium heat. Add olive oil, chopped onion, and cook until translucent. Add minced garlic and ground beef, cooking until browned.
  4. Mix honey with cayenne or chili flakes for the hot honey drizzle.
  5. Assemble the bowl starting with sweet potatoes, then ground beef, cottage cheese, drizzle hot honey, and top with avocado.

Notes

Make sweet potatoes and beef ahead of time; adjust toppings to preference.
