- 2 medium Sweet Potatoes
- 1 pound Ground Beef
- 1 medium Onion
- 4 cloves Garlic
- 1 cup Cottage Cheese
- ¼ cup Hot Honey
- 1 Avocado, sliced
- 2 tablespoons Olive Oil
- Salt
- Pepper
Instructions
- Preheat your oven to 400°F (200°C). Wash, peel, and dice the sweet potatoes into cubes. Drizzle with olive oil, and season with salt and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25 minutes, tossing halfway through.
- Heat a large skillet over medium heat. Add olive oil, chopped onion, and cook until translucent. Add minced garlic and ground beef, cooking until browned.
- Mix honey with cayenne or chili flakes for the hot honey drizzle.
- Assemble the bowl starting with sweet potatoes, then ground beef, cottage cheese, drizzle hot honey, and top with avocado.

Make sweet potatoes and beef ahead of time; adjust toppings to preference.
