Description

A vibrant and flavorful taco bowl featuring roasted sweet potatoes, seasoned ground beef, creamy guacamole, and fresh pico de gallo.


Ingredients

  • 4 cups Sweet Potatoes (Cubed)
  • 2 tablespoons Olive Oil (Or avocado oil)
  • 1 teaspoon Smoked Paprika (Or regular paprika)
  • Salt, to taste
  • Pepper, to taste
  • 1 pound Ground Beef (Or turkey, chicken, or black beans)
  • 2 tablespoons Taco Seasoning (Homemade or store-bought)
  • 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
  • 1 cup Guacamole (Mashed avocado with lime juice)
  • 1/2 cup Sour Cream (Or Greek yogurt)
  • Optional Toppings: Crumbled cheese, lime wedges, tortilla chips

Instructions

  1. Preheat your oven to 425°F (220°C) so it’s ready for the sweet potatoes.
  2. Place the cubed sweet potatoes in a large mixing bowl. Drizzle with olive oil, smoked paprika, salt, and pepper. Mix until evenly coated.
  3. Spread the sweet potatoes out in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, tossing halfway through, until they are golden and tender.
  4. Meanwhile, heat a large skillet over medium heat. Add the ground beef, breaking it apart. Cook until it’s browned, about 5-7 minutes. Drain excess fat if necessary.
  5. Sprinkle the taco seasoning over the browned meat, stirring to combine. Add a splash of water if needed. Continue cooking for an additional 2-3 minutes, letting the spices meld together.
  6. Once the sweet potatoes have finished roasting, it’s time to build your bowl. Start with a layer of sweet potatoes at the bottom, then top with seasoned ground meat.
  7. Spoon over fresh pico de gallo and guacamole. Finish with a drizzle of sour cream and any other toppings you desire.
  8. Serve immediately, garnished with lime wedges for that extra zing!
