Description

A delightful blend of roasted sweet potatoes, seasoned beef, fresh pico de gallo, creamy guacamole, and sour cream creating a nourishing and vibrant taco bowl.


Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • ½ lb ground beef (or turkey/lentils)
  • 1 tbsp taco seasoning
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss sweet potatoes with olive oil, smoked paprika, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet in a single layer and roast for 15 minutes, then flip and roast for another 10-15 minutes.
  4. While the sweet potatoes roast, cook the ground beef in a non-stick skillet over medium heat until browned, then add taco seasoning and cook for 2-3 minutes.
  5. To assemble, divide roasted sweet potatoes into bowls, top with cooked beef, pico de gallo, guacamole, and sour cream.

Notes
