Description

A delightful twist on the classic grilled cheese, featuring crispy zucchini patties and gooey cheese, perfect for any occasion.


Ingredients

  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan
  • ¼ cup cornstarch
  • Salt and pepper, to taste
  • 2 tablespoons fresh churned garlic butter
  • 12 cups shredded Cheddar

Instructions

  1. Squeeze the zucchini to remove excess moisture using a kitchen towel or cheesecloth.
  2. Combine the drained zucchini with egg, Parmesan, cornstarch, salt, and pepper in a mixing bowl.
  3. Heat a skillet over medium heat and melt the garlic butter.
  4. Form patties from the mixture and place them in the skillet.
  5. Cook each patty for 3–4 minutes on each side until golden and crisp.
  6. Create the sandwich by adding Cheddar on one patty, topping it with another patty and cooking for an additional 3 minutes.
  7. Slice and serve warm.

Notes

For a healthier option, consider using an air fryer. You can also prepare the zucchini mixture in advance.
