Description

Quick and easy Buffalo Chickpea Wraps packed with flavor and nutrition, perfect for any occasion.


Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayonnaise or Greek yogurt
  • 2 tablespoons Buffalo hot sauce
  • 1 tablespoon fresh lemon juice
  • 1 celery stalk, finely diced
  • 1 small carrot, grated
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 4 large flour tortillas or whole wheat wraps
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese or vegan cheese (optional)
  • 1/4 cup ranch or blue cheese dressing (optional)

Instructions

  1. Mash the chickpeas in a medium mixing bowl using a fork or potato masher, leaving some whole for added texture.
  2. Combine vegan mayonnaise, Buffalo hot sauce, lemon juice, celery, grated carrot, red onion, parsley, garlic powder, smoked paprika, salt, and pepper in the bowl, stirring until mixed.
  3. Prepare the tortillas on a clean countertop. Divide lettuce, tomatoes, and cheese (if using) evenly onto each wrap.
  4. Fill the wraps with spoonfuls of the Buffalo chickpea salad over the veggies, drizzling with dressing if desired.
  5. Roll each tortilla tightly, tucking in the sides as you go to securely encase the filling.
  6. Slice the wraps in half to serve, or wrap in foil for a portable option.

Notes

Make the chickpea mix a day in advance for quick assembly. For extra flavor, consider grilling the wraps for a few minutes on each side.
