Description

A stunning layered cake featuring rich blackberry mousse and creamy vanilla, perfect for any celebration.


Ingredients

  • 2 cups blackberries
  • 1 cup sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla bean paste
  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon gelatin
  • 6 eggs
  • 1 cup all-purpose flour
  • 1/2 cup butter
  • 1 teaspoon baking powder
  • 1 pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pan generously.
  2. Combine blackberries, sugar, and water in a saucepan over medium heat. Cook for 5-7 minutes, then strain to create a smooth puree.
  3. Whip together 1 ½ cups heavy cream and powdered sugar until soft peaks form. Fold in blackberry puree and vanilla bean paste.
  4. Beat eggs and sugar together until light and fluffy, about 5 minutes. Mix in the melted butter.
  5. Sift together flour, baking powder, and salt, then incorporate into the egg mixture until just combined.
  6. Pour batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out clean. Cool completely.
  7. Dissolve gelatin in warm water and mix into the remaining whipped cream; fold into the blackberry mousse.
  8. Layer the cooled cake with blackberry mousse and refrigerate for at least 4 hours, or overnight.
  9. Decorate with fresh blackberries before serving.

Notes

This cake can be made a day in advance for improved flavor meld. Store leftovers in the refrigerator for up to 3 days.
