- 6 jalapeños, halved and seeds removed
- 1 cup brie cheese, cut into small pieces
- 1/2 cup fresh blueberries
- 1/4 cup cream cheese, softened
- 1 tablespoon honey
- 1 tablespoon chopped fresh cilantro (optional)
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the brie cheese, cream cheese, honey, blueberries, smoked paprika, salt, and pepper in a bowl until well combined.
- Stuff each jalapeño half with the cheese mixture, mounding it slightly.
- Place the stuffed jalapeños on a baking sheet lined with parchment paper.
- Drizzle with olive oil and sprinkle with cilantro if desired.
- Bake for about 20-25 minutes, or until jalapeños are tender and cheese is bubbly.
- Allow to cool slightly before serving.
