Description

Ingredients

  • 1 cup blueberries
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup sugar
  • 1 stick butter, room temperature

  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, and salt in a large mixing bowl.
  3. Cream the room temperature butter and sugar in the bowl of your stand mixer until light and fluffy (about 2-3 minutes).
  4. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  5. Blend in the sour cream until smooth and creamy.
  6. Incorporate the dry ingredients slowly, mixing gently until just combined.
  7. Fold in the blueberries and diced peaches carefully.
  8. Grease a loaf pan or line it with parchment paper, then pour in the batter.
  9. Bake for 1 hour and 15 minutes, or until golden brown and a toothpick comes out clean.
  10. Cool the bread in the pan for about 10 minutes before transferring it to a cooling rack.
