- 2 cups fresh broccoli, chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Combine the chopped broccoli, shredded cheese, all-purpose flour, eggs, grated Parmesan cheese, garlic powder, onion powder, and a pinch of salt and pepper in a large mixing bowl until well mixed.
- Heat a splash of oil in a non-stick skillet over medium heat until shimmering.
- Drop dollops of the mixture into the skillet and gently flatten with the back of the spoon to form fritters.
- Cook until golden brown and crispy, about 3 to 4 minutes on each side.
- Remove from the skillet and drain on paper towels to remove excess oil.
- Serve warm with your favorite dips.
