Description

Delightful Cannoli Cookies with creamy ricotta, bright citrus notes, and chocolate chips, offering a unique twist on the classic Italian dessert.


Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/2 cup mini chocolate chips
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon orange zest
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the ricotta cheese, egg, and vanilla extract in a mixing bowl until smooth.
  3. Whisk together the flour, powdered sugar, granulated sugar, baking powder, cinnamon, and salt in another bowl.
  4. Add the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fold in the mini chocolate chips and orange zest.
  6. Drop spoonfuls of dough about 2 inches apart onto the prepared baking sheet.
  7. Bake for 12-15 minutes, or until edges are lightly golden.
  8. Cool slightly before transferring to a wire rack to cool completely.
