Description

Delightful, moist carrot cake bars topped with a creamy cream cheese drizzle, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, melted
  • 3 large eggs
  • 2 cups grated carrots
  • 1 cup chopped nuts (optional)
  • 1 package cream cheese (8 oz), softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix dry ingredients in a bowl: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients in another bowl: blend granulated sugar, brown sugar, and melted butter until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Combine the wet and dry mixtures gradually, stirring until just combined.
  6. Fold in grated carrots and nuts (if using) until just incorporated.
  7. Pour the batter into the prepared baking dish, smoothing the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Prepare the cream cheese drizzle by beating together softened cream cheese, powdered sugar, milk, and vanilla until smooth.
  10. Finish by drizzling the cream cheese mixture over the cooled bars before cutting them into squares.
  11. Serve and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Can be frozen for up to three months.
