- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup unsalted butter, melted
- 3 large eggs
- 2 cups grated carrots
- 1 cup chopped nuts (optional)
- 1 package cream cheese (8 oz), softened
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Mix dry ingredients in a bowl: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients in another bowl: blend granulated sugar, brown sugar, and melted butter until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Combine the wet and dry mixtures gradually, stirring until just combined.
- Fold in grated carrots and nuts (if using) until just incorporated.
- Pour the batter into the prepared baking dish, smoothing the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the cream cheese drizzle by beating together softened cream cheese, powdered sugar, milk, and vanilla until smooth.
- Finish by drizzling the cream cheese mixture over the cooled bars before cutting them into squares.
