Description

Ingredients

  • 1 cup grated fresh carrots
  • 1 cup pitted dates
  • 1/2 cup walnuts, chopped
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Pinch of salt
  • Shredded coconut for rolling (optional)

Instructions

  1. Blend the grated carrots, pitted dates, chopped walnuts, rolled oats, vanilla extract, cinnamon, nutmeg, and a pinch of salt into your food processor until sticky.
  2. Form about a tablespoon of the mixture into a ball approximately 1 inch in diameter.
  3. Optional: Roll each ball in shredded coconut if desired.
  4. Chill the bliss balls in an airtight container for at least 30 minutes to firm up.

Notes

Make-ahead: Store in the fridge for up to a week or freeze for three months. Use sunflower seeds for a nut-free option.
