Description

A comforting and savory blend of seasoned ground beef, rice, and melted cheese, topped with fresh salsa, avocado, and sour cream.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup rice
  • 2 cups water or beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 can diced tomatoes (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Toppings: sour cream, avocado, salsa

Instructions

  1. Brown the beef: In a large skillet, over medium heat, brown the ground beef until fully cooked. Drain the excess fat afterward.
  2. Add seasoning: Sprinkle in the taco seasoning, stirring it into the cooked beef. Pour in the water (or beef broth) and the rice, giving everything a good stir to combine.
  3. Bring to boil: Turn up the heat and bring the mixture to a boil.
  4. Simmer away: Once boiling, reduce the heat to low and cover the skillet. Let everything simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
  5. Incorporate veggies: Stir in the diced tomatoes and corn now, letting them mingle with the rice and beef.
  6. Melt the cheese: Turn off the heat, then sprinkle shredded cheese on top. Cover the skillet again to allow the cheese to melt.
  7. Serve it up: Scoop the Cheesy Taco Beef & Rice onto plates, and add your desired toppings of sour cream, sliced avocado, and salsa.

Notes

You can prepare the beef and rice mixture a day ahead and store it in the fridge. Customize toppings to your preference.
