- 1 pound ground beef
- 1 cup rice
- 2 cups water or beef broth
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 can diced tomatoes (optional)
- 1 cup corn (optional)
- Salt and pepper to taste
- Toppings: sour cream, avocado, salsa
Instructions
- Brown the beef: In a large skillet, over medium heat, brown the ground beef until fully cooked. Drain the excess fat afterward.
- Add seasoning: Sprinkle in the taco seasoning, stirring it into the cooked beef. Pour in the water (or beef broth) and the rice, giving everything a good stir to combine.
- Bring to boil: Turn up the heat and bring the mixture to a boil.
- Simmer away: Once boiling, reduce the heat to low and cover the skillet. Let everything simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Incorporate veggies: Stir in the diced tomatoes and corn now, letting them mingle with the rice and beef.
- Melt the cheese: Turn off the heat, then sprinkle shredded cheese on top. Cover the skillet again to allow the cheese to melt.
- Serve it up: Scoop the Cheesy Taco Beef & Rice onto plates, and add your desired toppings of sour cream, sliced avocado, and salsa.
Notes
You can prepare the beef and rice mixture a day ahead and store it in the fridge. Customize toppings to your preference.
