Description

Delightful chewy lemon cookies with a crinkled top dusted in powdered sugar, perfect for any occasion.


Ingredients

  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/4 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup powdered sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the granulated sugar, lemon juice, and vegetable oil until well combined.
  3. Whisk together the flour, baking powder, and salt in another bowl.
  4. Add the flour mixture to the wet ingredients, mixing until a dough forms.
  5. Scoop tablespoons of dough and roll them into balls.
  6. Roll the balls in powdered sugar until well coated.
  7. Place them on a baking sheet lined with parchment paper, spaced about two inches apart.
  8. Bake for about 10-12 minutes or until the edges are set.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Consider refrigerating the dough a day in advance to enhance flavors. Cookie dough can also be baked in an air fryer at a lower temperature.
