Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the granulated sugar, lemon juice, and vegetable oil until well combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Add the flour mixture to the wet ingredients, mixing until a dough forms.
- Scoop tablespoons of dough and roll them into balls.
- Roll the balls in powdered sugar until well coated.
- Place them on a baking sheet lined with parchment paper, spaced about two inches apart.
- Bake for about 10-12 minutes or until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Consider refrigerating the dough a day in advance to enhance flavors. Cookie dough can also be baked in an air fryer at a lower temperature.
