Description

Delight in the rich, velvety texture and decadent chocolate flavor of these moist chocolate cupcakes, topped with a creamy frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 3/4 cups powdered sugar
  • 23 tbsp milk (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line your cupcake tray with colorful liners.
  2. Whisk together the flour, cocoa powder, baking powder, and salt in a large mixing bowl.
  3. Mix the sugar and vegetable oil in a separate bowl until combined. Add the eggs, milk, and vanilla, whisking until smooth.
  4. Combine the wet and dry ingredients, stirring gently until just combined.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow cupcakes to cool completely before frosting.
  8. Beat the softened butter until creamy, then gradually add cocoa powder and powdered sugar until smooth.
  9. Add milk to reach desired consistency, followed by more vanilla and a pinch of salt.

Notes

Frosting should be done once the cupcakes are completely cool to prevent melting.
