Description

Delicious chocolate cupcakes filled with a surprise of strawberry jam and topped with creamy frosting, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • ½ cup strawberry jam
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, eggs, vanilla extract, and buttermilk until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each cupcake liner about halfway with the chocolate batter.
  6. Add about 1 teaspoon of strawberry jam into the center of each cupcake batter.
  7. Top with more chocolate batter until the liners are about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely.
  10. For the frosting, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  11. Pipe the creamy frosting on top of the cupcakes, and drizzle some more strawberry jam if desired.

Notes
