Delicious chocolate cupcakes filled with a surprise of strawberry jam and topped with creamy frosting, perfect for any occasion.

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- ½ cup strawberry jam
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, eggs, vanilla extract, and buttermilk until fully combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fill each cupcake liner about halfway with the chocolate batter.
- Add about 1 teaspoon of strawberry jam into the center of each cupcake batter.
- Top with more chocolate batter until the liners are about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely.
- For the frosting, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Pipe the creamy frosting on top of the cupcakes, and drizzle some more strawberry jam if desired.
