Description

Delicious grilled chicken tacos marinated in zesty lime and fresh cilantro, packed with vibrant flavors and customizable toppings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp salt
  • 8 small corn or flour tortillas
  • Toppings: diced onions, chopped cilantro, sliced avocados, lime wedges

Instructions

  1. Whisk together lime juice, olive oil, cilantro, garlic, cumin, and salt in a medium mixing bowl.
  2. Add the chicken breasts to the bowl and coat them in the marinade. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  5. Allow the chicken to rest for 5 minutes to retain moisture.
  6. Warm tortillas on the grill for about 30 seconds on each side.
  7. Slice the grilled chicken into strips and assemble your tacos with desired toppings.

Notes

For deeper flavor, marinate the chicken the night before and prepare toppings in advance.
