- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp salt
- 8 small corn or flour tortillas
- Toppings: diced onions, chopped cilantro, sliced avocados, lime wedges
Instructions
- Whisk together lime juice, olive oil, cilantro, garlic, cumin, and salt in a medium mixing bowl.
- Add the chicken breasts to the bowl and coat them in the marinade. Cover and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- Allow the chicken to rest for 5 minutes to retain moisture.
- Warm tortillas on the grill for about 30 seconds on each side.
- Slice the grilled chicken into strips and assemble your tacos with desired toppings.
Notes
For deeper flavor, marinate the chicken the night before and prepare toppings in advance.
