Description

A light and fluffy cloud bread made with creamy cottage cheese and bursting with blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 cup blueberries
  • Sweetener of choice (to taste)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a mixing bowl until smooth and creamy.
  3. Crack in your eggs, and add the almond flour, baking powder, sweetener, and salt. Mix until combined.
  4. Fold in the blueberries gently to keep them intact.
  5. Spoon the batter onto the baking sheet, shaping it into cloud-like rounds.
  6. Slide the baking sheet into the oven and bake for 20-25 minutes until golden and set.
  7. Allow to cool before transferring to a wire rack.
