Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a mixing bowl until smooth and creamy.
- Crack in your eggs, and add the almond flour, baking powder, sweetener, and salt. Mix until combined.
- Fold in the blueberries gently to keep them intact.
- Spoon the batter onto the baking sheet, shaping it into cloud-like rounds.
- Slide the baking sheet into the oven and bake for 20-25 minutes until golden and set.
- Allow to cool before transferring to a wire rack.
