Description

Warm, hearty cookies filled with oats, chocolate chips, and nuts, perfect for sharing and indulging.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (walnuts or pecans)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl using an electric mixer.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract until fully incorporated.
  5. Whisk together the flour, baking soda, and salt in another bowl.
  6. Gradually mix the dry blend into your wet mixture until just combined.
  7. Fold in the oats, chocolate chips, nuts, and coconut, if using.
  8. Drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until edges are golden brown and centers are soft.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For softer cookies, pull them out of the oven a minute early; they will continue to bake slightly on the sheet. You can freeze the dough for future baking.
