- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1 cup chocolate chips
- 1 cup chopped nuts (walnuts or pecans)
- 1/2 cup shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl using an electric mixer.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract until fully incorporated.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually mix the dry blend into your wet mixture until just combined.
- Fold in the oats, chocolate chips, nuts, and coconut, if using.
- Drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown and centers are soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For softer cookies, pull them out of the oven a minute early; they will continue to bake slightly on the sheet. You can freeze the dough for future baking.
