Ingredients

- 2 cups of broth (chicken or vegetable)
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 2 potatoes, chopped
- 1 cup of cooked meat (chicken, beef, or beans)
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup of shredded cheese (for casseroles)
- 1 can of cream of mushroom soup (optional for casseroles)
Instructions
- Sauté the onions and garlic over medium heat until they become translucent and fragrant.
- Add the carrots, celery, and potatoes, stirring until the vegetables start to soften.
- Pour in the broth and bring to a gentle boil.
- Add thyme, salt, pepper, and your choice of cooked meat.
- Simmer the mixture until the vegetables are tender, roughly 20 minutes.
- If transforming into a casserole, mix ingredients with cheese and cream of mushroom soup in a baking dish and sprinkle more cheese on top.
- Bake at 350°F (175°C) for 30 minutes until golden and bubbly.
Notes
Make ahead the soup base and refrigerate or freeze. Adjust seasoning to taste during cooking.
