Description

A heartwarming dish that combines a flavorful soup with the comforting qualities of a casserole, perfect for any season.


Ingredients

Scale
  • 2 cups of broth (chicken or vegetable)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 2 potatoes, chopped
  • 1 cup of cooked meat (chicken, beef, or beans)
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup of shredded cheese (for casseroles)
  • 1 can of cream of mushroom soup (optional for casseroles)

Instructions

  1. Sauté the onions and garlic over medium heat until they become translucent and fragrant.
  2. Add the carrots, celery, and potatoes, stirring until the vegetables start to soften.
  3. Pour in the broth and bring to a gentle boil.
  4. Add thyme, salt, pepper, and your choice of cooked meat.
  5. Simmer the mixture until the vegetables are tender, roughly 20 minutes.
  6. If transforming into a casserole, mix ingredients with cheese and cream of mushroom soup in a baking dish and sprinkle more cheese on top.
  7. Bake at 350°F (175°C) for 30 minutes until golden and bubbly.

Notes

Make ahead the soup base and refrigerate or freeze. Adjust seasoning to taste during cooking.
