- 1 package of berry-flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 package of cream cheese (8 oz)
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- Graham crackers or sponge cake for layering
- Fresh berries for topping (optional)
Instructions
- Prepare the berry gelatin: In a mixing bowl, dissolve 1 package of berry-flavored gelatin in 1 cup of boiling water. Stir in 1 cup of cold water and refrigerate until firm, about 2 hours.
- Beat the cream cheese: In a separate mixing bowl, beat 1 package of softened cream cheese until smooth. Gradually add in 1 cup of powdered sugar and 1 teaspoon of vanilla extract, mixing until fluffy.
- Whip the heavy cream: In another bowl, whip 1 cup of heavy whipping cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture gently, keeping it light and airy.
- Layer the ingredients: In a 9×13 dish, layer graham crackers or sponge cake, spread half of the cream cheese filling, and layer half of the gelatin.
- Add remaining layers: Repeat with another layer of graham crackers or sponge cake, the rest of the cream cheese filling, and the rest of the gelatin on top.
- Top with fresh berries if desired.
- Chill: Cover with plastic wrap and chill for several hours or overnight.
- Serve and enjoy: Cut into squares and serve.
