Description

A delightful dessert featuring creamy layers of cream cheese and fruity berry gelatin, perfect for summer gatherings.


Ingredients

  • 1 package of berry-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 package of cream cheese (8 oz)
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Graham crackers or sponge cake for layering
  • Fresh berries for topping (optional)

Instructions

  1. Prepare the berry gelatin: In a mixing bowl, dissolve 1 package of berry-flavored gelatin in 1 cup of boiling water. Stir in 1 cup of cold water and refrigerate until firm, about 2 hours.
  2. Beat the cream cheese: In a separate mixing bowl, beat 1 package of softened cream cheese until smooth. Gradually add in 1 cup of powdered sugar and 1 teaspoon of vanilla extract, mixing until fluffy.
  3. Whip the heavy cream: In another bowl, whip 1 cup of heavy whipping cream until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture gently, keeping it light and airy.
  5. Layer the ingredients: In a 9×13 dish, layer graham crackers or sponge cake, spread half of the cream cheese filling, and layer half of the gelatin.
  6. Add remaining layers: Repeat with another layer of graham crackers or sponge cake, the rest of the cream cheese filling, and the rest of the gelatin on top.
  7. Top with fresh berries if desired.
  8. Chill: Cover with plastic wrap and chill for several hours or overnight.
  9. Serve and enjoy: Cut into squares and serve.
