  • 2 cups Buttermilk
  • 1.5 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1.5 tsp Paprika
  • 1 tsp Red Chili Powder
  • 1/2 tsp White Pepper
  • 2 cups All-Purpose Flour
  • 1/2 cup Cornflour
  • 1 tsp Baking Powder
  • Cold Water (as needed)
  • Oil (for deep frying)

Instructions

  1. Prep the chicken by washing and drying thoroughly.
  2. Marinate the chicken in buttermilk, salt, and spices, and refrigerate for at least 4 hours.
  3. Make the flour mixture by whisking together all-purpose flour, cornflour, and baking powder.
  4. Coat the chicken in the flour mixture, ensuring a thorough covering.
  5. Enhance the texture with a spritz of cold water for extra crunch.
  6. Heat the oil in a deep fryer to 170°C to 175°C (340°F to 350°F).
  7. Fry the chicken in small batches for 12 to 15 minutes until golden brown.
  8. Rest the chicken on a cooling rack to maintain crunch.
