Description

Delight in these crispy smashed carrots that are golden on the outside and tender on the inside, perfect as a side dish or savory snack.


Ingredients

  • Fresh Carrots
  • Olive Oil
  • Salt
  • Pepper
  • Optional Seasonings: Garlic powder, paprika, or fresh herbs

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots, cut them into similar-sized pieces.
  3. Boil the carrots in salted water for about 10-15 minutes, until slightly tender.
  4. Drain and let them cool slightly, then smash each carrot piece gently with a fork or glass.
  5. Toss the smashed carrots with olive oil, salt, pepper, and seasonings.
  6. Roast for 20-25 minutes until golden and crispy.
  7. Serve warm as a side dish.
