- 1 pound chicken breasts, boneless and skinless
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1–2 jalapeños, sliced
- Vegetable oil for frying
Instructions
- Marinate the chicken: Immerse the chicken breasts in a large bowl of buttermilk. Cover and refrigerate for at least one hour or overnight.
- Prepare the dredging mixture: In a shallow dish, combine flour, cornmeal, paprika, cayenne pepper, garlic powder, onion powder, and salt and pepper. Stir well.
- Dredge the chicken: Remove chicken from the buttermilk, shake off excess, and dredge in the flour mixture, coating thoroughly.
- Heat the oil: In a cast iron skillet, pour enough vegetable oil to cover the bottom and heat over medium-high until shimmering.
- Fry the chicken: Carefully lower the coated chicken pieces into the hot oil. Fry until golden brown, about 6-8 minutes each side, ensuring the internal temperature reaches 165°F.
- Add the jalapeños: Toss in the sliced jalapeños during the last few minutes of cooking.
- Drain and serve: Remove chicken and jalapeños from skillet and place on paper towels to drain. Serve hot with your favorite dipping sauce.
