- 1 package cheese tortellini (about 20 oz)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 onion (sliced)
- 2 cups provolone cheese (shredded)
- 1 cup beef broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: Italian seasoning
Instructions
- Combine beef and veggies: In your crock pot, layer the sliced beef, red bell pepper, green bell pepper, and onion together.
- Pour in broth and cream: Add the beef broth and heavy cream, then season with salt, pepper, and Italian seasoning if desired. Stir gently.
- Slow cook: Cover the crock pot and set it to low for 6-7 hours, stirring occasionally.
- Add tortellini: About 30 minutes before serving, stir in the tortellini.
- Add provolone: Just before serving, fold in the provolone cheese until melted.
- Serve and savor: Ladle into bowls and enjoy with loved ones.
