Description

A hearty and comforting crock pot dish that combines beef, bell peppers, and creamy provolone cheese with tender cheese tortellini.


Ingredients

  • 1 lb beef (thinly sliced)
  • 1 package cheese tortellini (about 20 oz)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cups provolone cheese (shredded)
  • 1 cup beef broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: Italian seasoning

Instructions

  1. Combine beef and veggies: In your crock pot, layer the sliced beef, red bell pepper, green bell pepper, and onion together.
  2. Pour in broth and cream: Add the beef broth and heavy cream, then season with salt, pepper, and Italian seasoning if desired. Stir gently.
  3. Slow cook: Cover the crock pot and set it to low for 6-7 hours, stirring occasionally.
  4. Add tortellini: About 30 minutes before serving, stir in the tortellini.
  5. Add provolone: Just before serving, fold in the provolone cheese until melted.
