Description

A comforting slow-cooked taco casserole layered with ground beef, pasta, cheese, and vibrant vegetables, perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 cup taco seasoning
  • 2 cups cooked pasta or rice
  • 2 cups shredded cheese
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup bell peppers, chopped
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, stirring in the taco seasoning until fully cooked.
  2. Combine the cooked ground beef with pasta or rice, diced tomatoes, black beans, corn, and bell peppers in the crockpot.
  3. Sprinkle the shredded cheese evenly over the top.
  4. Cover the crockpot and set it on low for 4-6 hours or high for 2-3 hours.
  5. Serve warm with your favorite toppings.

Notes

Assemble the casserole a day in advance and refrigerate. You can also bake it in the oven at 350°F for 30-35 minutes.
