- 1 lb ground beef
- 1 cup taco seasoning
- 2 cups cooked pasta or rice
- 2 cups shredded cheese
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup bell peppers, chopped
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat, stirring in the taco seasoning until fully cooked.
- Combine the cooked ground beef with pasta or rice, diced tomatoes, black beans, corn, and bell peppers in the crockpot.
- Sprinkle the shredded cheese evenly over the top.
- Cover the crockpot and set it on low for 4-6 hours or high for 2-3 hours.
- Serve warm with your favorite toppings.
Notes
Assemble the casserole a day in advance and refrigerate. You can also bake it in the oven at 350°F for 30-35 minutes.
