- 350g water
- 100g sourdough starter
- 10g salt
- 50g unsalted butter (softened)
- Optional: extra flour for dusting
Instructions
- Combine the bread flour and water in a large mixing bowl. Mix until no dry flour remains, forming a shaggy dough.
- Add the sourdough starter and salt to the mixture. Knead the dough until smooth and elastic, about 5-10 minutes.
- Incorporate the softened butter, kneading further until it’s well-blended into the dough.
- Allow the dough to rise in a warm place until it doubles in size, usually about 240-360 minutes.
- Turn the dough out onto a lightly floured surface. Shape it into a rectangle and fold it in thirds, mimicking a letter.
- Roll the dough out gently to maintain the layers. Repeat the folding process two more times, chilling in the fridge for 30 minutes between folds if needed.
- Shape the dough into a loaf and place it in a baking pan.
- Let the dough proof in a warm area for another 120-180 minutes until it becomes noticeably puffy.
- Preheat the oven to 450°F (230°C).
- Bake the loaf for 25-30 minutes, or until it turns a beautiful golden brown and the crust sounds hollow when tapped.
