Description

Ingredients

  • 500g bread flour
  • 350g water
  • 100g sourdough starter
  • 10g salt
  • 50g unsalted butter (softened)
  • Optional: extra flour for dusting

Instructions

  1. Combine the bread flour and water in a large mixing bowl. Mix until no dry flour remains, forming a shaggy dough.
  2. Add the sourdough starter and salt to the mixture. Knead the dough until smooth and elastic, about 5-10 minutes.
  3. Incorporate the softened butter, kneading further until it’s well-blended into the dough.
  4. Allow the dough to rise in a warm place until it doubles in size, usually about 240-360 minutes.
  5. Turn the dough out onto a lightly floured surface. Shape it into a rectangle and fold it in thirds, mimicking a letter.
  6. Roll the dough out gently to maintain the layers. Repeat the folding process two more times, chilling in the fridge for 30 minutes between folds if needed.
  7. Shape the dough into a loaf and place it in a baking pan.
  8. Let the dough proof in a warm area for another 120-180 minutes until it becomes noticeably puffy.
  9. Preheat the oven to 450°F (230°C).
  10. Bake the loaf for 25-30 minutes, or until it turns a beautiful golden brown and the crust sounds hollow when tapped.
