A refreshing and creamy cucumber salad featuring ranch dressing, perfect for summer gatherings.
Ingredients

- 4–5 large English cucumbers
- 1 tsp salt
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 packet ranch dressing mix
- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Freshly cracked black pepper, to taste
- 1/2 red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 2 tbsp chives, chopped
- 1/4 cup sunflower seeds or chopped pecans (optional)
- 4 oz crumbled feta or goat cheese (optional)
- 1/4 cup crispy bacon bits (optional)
- Everything bagel seasoning, for sprinkling
Instructions
- Wash and slice your cucumbers into rounds about 1/4 inch thick, optionally peeling them.
- Toss the cucumber slices with salt in a large colander and let them sit for 15-20 minutes.
- Whisk together the mayo, sour cream, ranch dressing mix, apple cider vinegar, lemon juice, garlic powder, and onion powder in a large bowl.
- Rinse the cucumbers under cold water, pat them dry with towels.
- Add the dried cucumbers to the creamy ranch mixture along with the sliced red onion, dill, and chives.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Before serving, add sunflower seeds or nuts, sprinkle crumbled cheese if using, and finish with freshly cracked black pepper and everything bagel seasoning.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise or sour cream. Use fresh herbs for maximum flavor.
