Description

A refreshing and creamy cucumber salad featuring ranch dressing, perfect for summer gatherings.


Ingredients

  • 45 large English cucumbers
  • 1 tsp salt
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 packet ranch dressing mix
  • 2 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Freshly cracked black pepper, to taste
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 2 tbsp chives, chopped
  • 1/4 cup sunflower seeds or chopped pecans (optional)
  • 4 oz crumbled feta or goat cheese (optional)
  • 1/4 cup crispy bacon bits (optional)
  • Everything bagel seasoning, for sprinkling

Instructions

  1. Wash and slice your cucumbers into rounds about 1/4 inch thick, optionally peeling them.
  2. Toss the cucumber slices with salt in a large colander and let them sit for 15-20 minutes.
  3. Whisk together the mayo, sour cream, ranch dressing mix, apple cider vinegar, lemon juice, garlic powder, and onion powder in a large bowl.
  4. Rinse the cucumbers under cold water, pat them dry with towels.
  5. Add the dried cucumbers to the creamy ranch mixture along with the sliced red onion, dill, and chives.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.
  7. Before serving, add sunflower seeds or nuts, sprinkle crumbled cheese if using, and finish with freshly cracked black pepper and everything bagel seasoning.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise or sour cream. Use fresh herbs for maximum flavor.
