Description

A creamy and flavorful potato salad infused with the essence of deviled eggs, perfect for any gathering.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon celery, finely chopped
  • 1 tablespoon green onions, sliced
  • Salt and pepper, to taste
  • Paprika, for garnish

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and cool completely.
  2. Prepare the dressing by whisking together mayonnaise, Dijon mustard, and apple cider vinegar in a mixing bowl.
  3. Combine the cooled potatoes with the dressing, then fold in the chopped eggs, celery, and green onions.
  4. Season to taste with salt and pepper.
  5. Garnish with paprika atop the salad, then chill in the refrigerator for at least an hour.
  6. Serve chilled for the best flavor and texture.
