Instructions
- Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and cool completely.
- Prepare the dressing by whisking together mayonnaise, Dijon mustard, and apple cider vinegar in a mixing bowl.
- Combine the cooled potatoes with the dressing, then fold in the chopped eggs, celery, and green onions.
