Description

A comforting dish featuring tender chicken and creamy rice, infused with savory goodness and simplicity.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine rice, chicken broth, cream of chicken soup, onion, garlic powder, salt, and pepper in a large baking dish.
  3. Lay the chicken breasts on top of the rice mixture.
  4. Cover the baking dish tightly with aluminum foil.
  5. Bake for 1 hour.
  6. Remove the foil and bake for an additional 15 minutes.
  7. If desired, stir in mixed vegetables during the last 10 minutes of baking.
  8. Serve hot and enjoy!

Notes

Make-ahead by prepping the dish up to the baking point and refrigerating. Use a meat thermometer to check chicken doneness at 165°F (75°C).
