Description

Colorful and crunchy tortilla roll-ups filled with fresh vegetables and a creamy spread, perfect for snacks or appetizers.


Ingredients

  • 4 tortillas (flour, whole wheat, or spinach)
  • 1 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup arugula
  • 4 oz cream cheese (or hummus)
  • 2 tbsp fresh dill or chives, chopped

Instructions

  1. Prepare the ingredients: Wash and slice the vegetables into thin strips.
  2. Mix the spread: Blend cream cheese with chopped herbs until smooth.
  3. Assemble the roll-ups: Spread a layer of the creamy spread onto a tortilla.
  4. Add vegetables: Arrange sliced vegetables along the edge of the tortilla.
  5. Roll it up: Fold the edge nearest to you over the vegetables and roll tightly.
  6. Slice and serve: Cut into bite-sized pieces and arrange on a platter.

Notes

These roll-ups can be made a day in advance and stored in plastic wrap. Best enjoyed fresh, but can be microwaved briefly if needed.
