- 4 tortillas (flour, whole wheat, or spinach)
- 1 cucumber, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup arugula
- 4 oz cream cheese (or hummus)
- 2 tbsp fresh dill or chives, chopped
Instructions
- Prepare the ingredients: Wash and slice the vegetables into thin strips.
- Mix the spread: Blend cream cheese with chopped herbs until smooth.
- Assemble the roll-ups: Spread a layer of the creamy spread onto a tortilla.
- Add vegetables: Arrange sliced vegetables along the edge of the tortilla.
- Roll it up: Fold the edge nearest to you over the vegetables and roll tightly.
- Slice and serve: Cut into bite-sized pieces and arrange on a platter.
Notes
These roll-ups can be made a day in advance and stored in plastic wrap. Best enjoyed fresh, but can be microwaved briefly if needed.
