Description

A vibrant and flavorful side dish infused with fresh lemon and olive oil, perfect for any meal.


Ingredients

  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups vegetable broth or water
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley (for garnish)
  • Optional: minced garlic or onion

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. If using, add minced garlic or onion and sauté for 2-3 minutes.
  2. Add the long-grain rice, stirring frequently for 1-2 minutes.
  3. Pour in the vegetable broth (or water), followed by lemon juice, lemon zest, salt, and black pepper. Stir gently.
  4. Bring the mixture to a boil, then reduce heat to low, cover tightly, and let simmer for 15-20 minutes.
  5. Fluff the rice gently with a fork, garnish with fresh parsley, and serve.

Notes
