- 2 large flour tortillas
- 1 cup shredded cheese (Cheddar or cheese blend)
- 1 cup cooked rice (white or brown)
- 1/2 cup black beans (optional)
- 1/2 cup cooked protein (chicken, beef, or tofu)
- 1 tablespoon taco seasoning
- 1/4 cup sour cream (optional)
- 1/4 cup salsa (optional)
- Butter for grilling
Instructions
- Preheat the skillet: Heat a skillet or griddle over medium heat.
- Mix the filling: In a mixing bowl, combine cooked rice, black beans (if using), protein, taco seasoning, and half of the cheese.
- Prepare the tortilla: Lay a tortilla flat and place half of the filling mixture in the center.
- Layer with cheese: Sprinkle remaining cheese on top of your filling.
- Fold and roll: Fold in both sides of the tortilla and roll tightly from the bottom.
- Butter it up: Spread a layer of butter on the outside of the burrito.
- Grill to perfection: Place the burrito seam-side down in the skillet. Cook for about 3-4 minutes on each side.
- Serve and enjoy: Remove from skillet and serve warm with optional sour cream and salsa.
