Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, fresh or canned
  • 1/2 red onion, diced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the shrimp: In a mixing bowl, combine olive oil, lime juice, paprika, salt, and pepper. Add the shrimp, ensuring they are well-coated. Allow to marinate for 15-30 minutes while you prepare the other ingredients.
  2. Preheat the grill: Set your grill to medium-high.
  3. Grill the shrimp: Place the shrimp directly on the grill. Cook for 2-3 minutes on each side, or until they turn pink and opaque.
  4. Prepare the corn-avocado mix: In a separate bowl, mix together the corn, diced red onion, and avocado. Squeeze a little lime juice to keep the avocado vibrant.
