Description

A comforting chicken soup filled with tender chicken, vibrant vegetables, and aromatic herbs, perfect for revitalizing the body and soul.


Ingredients

Scale
  • 1 lb chicken breast, shredded
  • 4 cups chicken broth
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups kale or spinach (optional)

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, carrots, and celery. Sauté gently for about 5 to 7 minutes.
  2. Nestle the shredded chicken into the pot. Pour in the chicken broth and sprinkle in the thyme, salt, and pepper. Stir and bring to a boil.
  3. Reduce the heat to low and let the soup simmer for 20-25 minutes.
  4. If adding kale or spinach, stir them in during the last 5 minutes of cooking.
  5. Serve warm, ladled into bowls, and enjoy.

Notes

This soup makes great leftovers and can be frozen for later enjoyment. Consider preparing a double batch.
