- 1 lb chicken breast, shredded
- 4 cups chicken broth
- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 cups kale or spinach (optional)
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, carrots, and celery. Sauté gently for about 5 to 7 minutes.
- Nestle the shredded chicken into the pot. Pour in the chicken broth and sprinkle in the thyme, salt, and pepper. Stir and bring to a boil.
- Reduce the heat to low and let the soup simmer for 20-25 minutes.
- If adding kale or spinach, stir them in during the last 5 minutes of cooking.
- Serve warm, ladled into bowls, and enjoy.
Notes
This soup makes great leftovers and can be frozen for later enjoyment. Consider preparing a double batch.
