- 1/4 cup light corn syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon peppermint extract
- 1/4 cup water
- 8 oz dark chocolate, chopped
- 1 tablespoon coconut oil (optional)
Instructions
- Combine the powdered sugar, corn syrup, cocoa powder, peppermint extract, and water in a mixing bowl until smooth.
- Roll the mixture into small balls or flatten into patties, about half an inch thick.
- Place the patties on a parchment-lined baking sheet and refrigerate for about 30 minutes.
- Set up a double boiler and melt the chopped dark chocolate over medium heat. Stir in coconut oil if using.
- Dip each patty into the melted chocolate, ensuring a full coat.
- Lift the patties out and let excess chocolate drip off before placing them back on parchment paper.
- Allow the chocolate to harden completely before storing in an airtight container in the fridge.
