Description

Delightful homemade peppermint patties featuring a creamy mint filling and a rich chocolate shell, perfect for any occasion.


Ingredients

  • 1 cup powdered sugar
  • 1/4 cup light corn syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon peppermint extract
  • 1/4 cup water
  • 8 oz dark chocolate, chopped
  • 1 tablespoon coconut oil (optional)

Instructions

  1. Combine the powdered sugar, corn syrup, cocoa powder, peppermint extract, and water in a mixing bowl until smooth.
  2. Roll the mixture into small balls or flatten into patties, about half an inch thick.
  3. Place the patties on a parchment-lined baking sheet and refrigerate for about 30 minutes.
  4. Set up a double boiler and melt the chopped dark chocolate over medium heat. Stir in coconut oil if using.
  5. Dip each patty into the melted chocolate, ensuring a full coat.
  6. Lift the patties out and let excess chocolate drip off before placing them back on parchment paper.
  7. Allow the chocolate to harden completely before storing in an airtight container in the fridge.

Notes
