Description

Ingredients

  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon fennel seeds
  • 1 teaspoon sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 tablespoon dried parsley
  • 1 teaspoon black pepper
  • 1/2 teaspoon chili flakes
  • 1 cup low-sodium vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons avocado oil
  • 2 tablespoons soy sauce
  • 1 teaspoon liquid smoke

Instructions

  1. Prepare Your Mixture: In a large mixing bowl, combine the vital wheat gluten, smoked paprika, garlic powder, fennel seeds, sea salt, onion powder, oregano, parsley, black pepper, and chili flakes. Mix well until combined.
  2. Incorporate Wet Ingredients: In a separate smaller bowl, whisk together the vegetable broth, tomato paste, avocado oil, soy sauce, and liquid smoke. Pour this mixture into the dry ingredients.
  3. Mix Thoroughly: Using a rubber spatula, fold the wet mixture into the dry ingredients until everything forms a sticky, cohesive dough. If it feels too dry, add a splash more vegetable broth.
  4. Knead: Knead the dough briefly on a clean surface until it becomes elastic, usually around 2-3 minutes.
  5. Shape: Roll the dough into a log shape, about 4 inches in diameter. Wrap it tightly in parchment paper, twisting the ends to secure it.
  6. Steam: Place the wrapped salami in a steaming basket over boiling water. Cover it with a lid and steam for about 30 minutes, flipping it halfway through for even cooking.
  7. Chill: After steaming, remove the salami and let it cool. Unwrap and refrigerate it for a minimum of one hour, allowing the flavors to meld together beautifully.
  8. Slice & Serve: Once chilled, slice your salami thinly and watch it disappear from the platter as your friends and family marvel at its deliciousness!
