- 2 sweet potatoes, cubed
- 1 lb fresh green beans, trimmed
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce

Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then trim the green beans.
- Whisk together the honey, minced garlic, soy sauce, olive oil, and seasoning in a mixing bowl.
- Combine the chicken, sweet potatoes, and green beans in a large baking dish.
- Pour the honey garlic mixture over the chicken and vegetables, tossing gently to coat.
- Bake for 25-30 minutes until the chicken is cooked through and the sweet potatoes are tender.
- Serve warm, drizzled with any remaining sauce.
Notes
For a gluten-free version, use tamari instead of soy sauce. To add some spice, consider tossing in red pepper flakes.
