Description

A heartwarming dish of tender chicken glazed with honey and garlic, served with roasted sweet potatoes and vibrant green beans.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 sweet potatoes, cubed
  • 1 lb fresh green beans, trimmed
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then trim the green beans.
  3. Whisk together the honey, minced garlic, soy sauce, olive oil, and seasoning in a mixing bowl.
  4. Combine the chicken, sweet potatoes, and green beans in a large baking dish.
  5. Pour the honey garlic mixture over the chicken and vegetables, tossing gently to coat.
  6. Bake for 25-30 minutes until the chicken is cooked through and the sweet potatoes are tender.
  7. Serve warm, drizzled with any remaining sauce.

Notes

For a gluten-free version, use tamari instead of soy sauce. To add some spice, consider tossing in red pepper flakes.
